  Pineapple Cooler

Ingredients
1 medium pineapple
7 ounces dark rum
2 ounces fresh lime juice
1 ounce Grand Marnier

Cooking Instructions
Carve out the center of the pineapple, leaving a 3⁄4-inch-thick shell; chill it for about 1 hour, or until ready to serve. Discard the tough pineapple core, place the remaining soft fruit in a blender, and purée until smooth. Strain through a coarse sieve into a pitcher. Stir in the rum, lime juice, and Grand Marnier, then pour into the chilled shell, adding 6 or 7 small ice cubes. Serve with two straws.
