Profile
Love him or hate him, there's no denying that the famously obstreperous David Bouley—bouncing between this kitchen and Danube—gets the job done. He's dispensed with the boutique breads, the oven, and the cafe to make room for lots more seats. And his loyal clientele gratefully lap it up in the ethereal form of degustation menus revolving around superlative seasonal ingredients like day boat lobster with coriander and vanilla, or organic Colorado lamb with rosemary quinoa.
