In 2016, eight years after Emmanuel Verstraeten brought Rouge Tomate from Brussels to New York, the restaurateur has reopened the restaurant in Chelsea. As the name indicates, it focuses on vegetable-heavy cooking guided by the lofty ways of S.P.E. (Sanitas Per Escam, or Health Through Food). While this might sound like a fancy way of saying spa food, S.P.E. is actually a “nutritional charter,” espousing “social and environmental consciousness” and “a balanced approach to sourcing and preparing food.” At Rogue Tomate Chelsea, the restaurant is smaller, but the wine list, which was also a destination at the original location, is bigger and more ambitious.
NoteThe restaurant is open for lunch from noon to 3 p.m. and dinner from 5:30 p.m. to 10:30 p.m.
