In spite of its ubiquity, a good cannolo is hard to find. The fact that the very best in town was, until recently, an off-the-menu secret doesn’t help. Owing to overwhelming demand, though, Gusto’s Jody Williams has taken pity on a long-suffering, quality-cannoli-starved public and vowed to list them on her dessert menu from now on. Crisp espresso-and-cocoa shells are filled with a not-too-sweet mixture of dense and creamy sheep’s-milk ricotta, homemade candied citrus, a splash of orange juice, and a pinch of cinnamon. Their ends are daintily dipped in a crunchy pile of toasted pistachios and shaved chocolate, and the petite cannoli—cannolini, really—are served three to an order, as if sharing were even an option.
