What makes this the city’s best new breakfast sandwich? Two fluffy eggs, undoubtedly the work of a well-contented chicken, with yolks that walk the tricky line between runny and fudgy; some lavish shavings of good English Cheddar, expertly melted; and a few perfectly ripe half-moons of avocado. The key, though, is a plump housemade pork-sausage patty that, along with a Sullivan St Bakery brioche roll engineered for slippery sandwich construction, places the thing more in the sphere of burgerdom than McMuffinland. Watch for it on the weekend menu at this American outpost of Rose Carrarini’s Parisian bakery, tucked away on the ground floor of the new Dover Street Market.
