Is a burger a burger without a bun? Technically, yes, at least according to Webster’s. But no one in their right mind really believes that. Still, there is historical precedent: Before burgers were bunned, they were sold as “hamburg steaks,” precursors to the chopped steaks you still find at old-school restaurants like Gallagher’s and Peter Luger. Which brings us to Via Carota’s svizzerina, an abundantly juicy, hand-chopped strip steak of such pure and profound flavor it could spark a naked-burger trend. The Via Carota svizzerina reminds us that burgers, first and foremost, are about the beef.
