Although the burger has gone through all sorts of lofty iterations recently, the creation of a truly gourmet hot dog has proved a tougher nut to crack. Daniel Humm and his assistants solve this problem by wrapping their dog in crackly strips of bacon. The fresh-baked bun is buttered on its toasty sides, like a lobster roll. Instead of the usual relish, it’s topped with celery rib, root, and leaf, and instead of onions, there’s a streak of, you guessed it, black-truffle aïoli. The only problem with this opulent little creation, as we see it, is that, unlike the original, it’s pretty much only possible to eat just one.
