The great ramen guru from Long Island (by way of Tokyo) has earned all sorts of kudos for his inventive noodle recipes, but at his Clinton Street flagship, it’s the non-noodle delicacies that we can’t stop thinking about. These addictive little flavor bombs are made with ground pork and a dash of ginger, which you can taste in your nose. They’re flash fried for extra crunch and dressed with dried bonito flakes that dance and wiggle pleasingly in the heat. Dip them in buttermilk dressing, or Japanese bulldog sauce, for an extra kick, or do what we do before the ramen hits the table and just pop them into your mouth neat.
