The herring freaks at Russ & Daughters Café devote an entire section of the menu to this noble fish, and the choices include a trio of pickled herring, and schmaltz herring with a shot of vodka. They’re both good, but for the true herring flâneur, the best option is the “assorted plate,” which at $20 is so reasonably priced that you just might want to order it twice.
