The food world may be far past the deification of uni, having moved on to other obsessions. And yet: Joshua Smookler’s treatment of it at his Long Island City ramen-ya merits renewed enthusiasm. His U&I is a double-roe rice bowl: Uni, or sea-urchin roe or gonads, meets ikura, bright-orange salmon roe, and mingles with spicy maguro over sushi rice coated in strips of sesame-roasted nori. The uni itself is delicate and creamy, and dabbed with fresh wasabi, and despite the dish’s name, you might not want to share.
