The first clue that this isn’t your typical Pabst den, despite its appearance to the contrary, is the fifties soda machine lurking behind the bar. That’s because the cocktail menu at Subject, brainchild of Chris Harrington (Momofuku, Saxon + Parole), puts syrup and mixers on the same pedestal as the sauce itself. So while hopheads can stick to the good stuff (craft cans run $5 to $10), cocktail fans will be rewarded with dangerously drinkable combos like mezcal and tequila tamed with vanilla, lime, and Bénédictine (the $13 Skeleton Sour). If you must chase a PBR with bourbon, it’s got those, too, though it may be infused with bitters, Laird’s Bonded Brandy, and chai syrup.
